Ingredients

8-inch Chocolate Hot Batter Chiffon Cake Ingredients: 5 Eggs, Granulated Sugarto taste
Granulated Sugar 80g (Egg Whites),to taste
Cocoa Powder 15g, a Few Drops of Lemon Juiceto taste
Milk 60g, Corn Oil 60g,to taste
Dark Chocolate 85g, Low-Gluten Flour 80g,to taste
20g (Egg Yolk)to taste
Decoration Materials: 8 Strawberries, 300g Whipping Cream, 20g Granulated Sugar, Melted Dark Chocolate as Neededto taste

1. Beat egg yolks with granulated sugar until thickened, set aside. Mix milk with corn oil.

2. Heat the milk and corn oil mixture over water, and sift the low-gluten flour and cocoa powder.

3. Remove the heated milk and corn oil mixture from the heat, quickly stir in the sifted powders to form a hot batter. Mix half of the egg yolk mixture into the batter, and then mix this back into the remaining egg yolk mixture until combined.

4. Melt dark chocolate over water and mix it into the egg yolk batter. Beat egg whites until coarse bubbles form, add half of the granulated sugar and a few drops of lemon juice, and continue beating until shiny and stiff. Add the remaining sugar and beat until stiff peaks form.

5. Fold 1/3 of the whipped egg whites into the egg yolk batter, then another 1/3, and finally mix the yolk batter into the remaining egg whites to fully incorporate. Pour the chiffon batter into a mold and bake in a preheated oven at 150°C. For an 8-inch cake, bake for 55 minutes; for a 6-inch, about 40 minutes. Remove and invert to cool.

6. In a mixing bowl, pour in whipping cream and granulated sugar, and whip until smooth.

7. Cut the cake evenly into three layers. Spread a thick layer of whipping cream on each layer, letting it naturally flow down the edges. Slice the tops off the strawberries.

8. Pipe the remaining whipping cream onto the cut surface of the strawberries to form Santa Claus heads, and top each with the cut-off strawberry tops as hats.
