Salt and Pepper Sesame Crisp (Beiding Recipe)

The addition of Sichuan pepper powder gives these cookies a unique flavor. They are super delicious, simple, and quick to make, making them one of the most frequently baked cookies.

Ingredients

Toasted Black Sesame30g
Low-Gluten Flour150g
Sea Salt3g
Fine Sugar60g
Sichuan Pepper Powder1g
Baking Soda1g
Baking Powder1g
Whole Egg Liquid20g
Corn Oil80g

Steps

Preheat the oven to 180°C (top) and 160°C (bottom) for about 22 minutes. Mix corn oil with fine sugar using a whisk until well combined, then add 20g of egg liquid and mix well.

Add salt, Sichuan pepper powder, baking soda, and baking powder in sequence, then mix well with a whisk.

Sift in flour and add toasted sesame.

Divide the dough into small portions of approximately 35g each and roll them into balls.
