Raisin and Nut Biscotti – California Raisins

Since the beginning of autumn, my frequency of skewered barbecue and hotpot meals has noticeably increased, leading to some serious seasonal weight gain. To make up for it, I decided to create a light dessert that's low in sugar and oil: the raisin and nut biscotti loaded with ingredients, to ease my guilt over indulging in fatty foods. This biscotti has very little sugar added, thanks to its secret ingredient — California Raisins. During baking, the natural fruit sugars in the raisins can replace added sugar! Plus, they contain no fat, no cholesterol, and are rich in dietary fiber, making them a healthier and more comforting choice. The number of biscotti can vary depending on their size and thickness. A 1cm thick biscotti can yield about 20 pieces.

Ingredients

California Raisins50g
Various roasted nuts40g
Eggs2 pieces (100g+ of beaten egg)
Caster sugar20g
Melted coconut oil/butter20g
Cake flour120g
Almond flour/hazelnut flour50g
Baking powder2g
Dusting flour (cake flour)A small amount

Add eggs and caster sugar to the bowl and completely whisk together.

Add slightly cooled melted coconut oil or butter and continue to whisk until combined.

Mix all the dry ingredients and sift half into the bowl. Fold them together with a spatula until no dry powder remains. At this stage, it will still be like a batter and easy to mix.

Sift in the remaining dry ingredients and continue folding. The batter will start to form into dough and might become tougher to fold. If it's too hard to mix, try cutting and folding, which helps a lot.

Add raisins and nuts; pack them generously.

Continue using the cut-and-fold method until roughly combined.

Place the dough on a floured work surface and gently roll it to coat with a thin layer of flour to prevent sticking.

Shape the dough into a rectangular slab, then fold the edges towards the center and press firmly.

Place the dough seam-side down on a baking sheet lined with parchment paper.

Bake in a preheated oven at 180°C (356°F) for 20 minutes on the middle rack.

During baking, the dough may expand and develop small cracks. The surface should feel firm to the touch.

Cool for 10 minutes until it is not too hot to handle. Slice into pieces 1-2cm thick. Thicker slices may require longer baking, while thinner slices bake faster.

Return the slices to the baking sheet. Bake one side for 8 minutes, then flip and bake the other side for 5 minutes.
